These red lentil patties are packed with plant-based protein, fiber, and bold flavors! Soft on the inside and crispy on the outside, they make a perfect healthy snack, vegetarian burger alternative, or a delicious side dish.
Ingredients
- 250 g red lentils
- 700 ml water
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 60 g cottage cheese
- 1 egg
- 2 tablespoons oatmeal
- Salt and spices to taste (e.g., cumin, paprika, or black pepper)
- Olive oil for frying
Procedure
- Cook the Lentils:
- Rinse the red lentils under cold water.
- In a pot, bring 700 ml of water to a boil, add the lentils, and simmer for about 15 minutes until soft.
- Drain any excess water.
- Prepare the Mixture:
- In a mixing bowl, blend the cooked lentils with garlic, onion, cottage cheese, egg, oatmeal, salt, and spices using a hand blender.
- Let the mixture rest for 15 minutes to thicken.
- Shape & Fry the Patties:
- Form the mixture into small patties.
- Heat olive oil in a pan and fry the patties on medium heat until golden brown on both sides, about 3-4 minutes per side.
- Serve & Enjoy:
- Serve warm, either on their own or as a side dish with fresh salad, yogurt dip, or inside a wrap!
Final Tip
For an even healthier, oil-free version, bake the patties in the oven at 200°C (392°F) for about 20 minutes, flipping halfway through. You can also add grated carrots, zucchini, or chopped herbs for extra flavor!
