Ingredients

For the dough:

  • 250 g Grandma’s Choice flour (perfect for sourdough)
  • 150 ml milk
  • 20 g fresh yeast
  • 50 g granulated sugar
  • 1 teaspoon cinnamon
  • 50 ml sunflower oil
  • Rind of 1 untreated lemon

For the crumble:

  • 50 g semi-coarse Grandma’s Choice flour
  • 30 g softened butter
  • 15 g sugar
  • 1 teaspoon cinnamon

For the filling:

  • 250 g full-fat cottage cheese
  • 1 egg
  • 1 packet of vanilla sugar
  • 350 g fresh plums, pitted and quartered

Procedure

1. Prepare the sourdough:
Crumble the yeast into the milk, sprinkle with sugar, and add a little flour. Let it sit undisturbed for about 10 minutes until bubbles form and the mixture rises.

2. Make the dough:
Combine the sourdough with the remaining dough ingredients to create a soft, pliable dough. Roll it out into a thin sheet and place it on a baking sheet lined with parchment paper.

3. Mix the filling:
In a bowl, combine the cottage cheese, egg, and vanilla sugar until smooth.

4. Prepare the crumble:
Mix the crumble ingredients in a bowl. Use your fingers to blend until the mixture resembles coarse crumbs.

5. Assemble the cake:
Spread the cottage cheese mixture evenly over the dough. Arrange the plums on top and finish with a generous sprinkling of crumble.

6. Bake:
Preheat your oven to 180°C (356°F). Bake the cake for about 40 minutes, or until the top is golden brown.

Final Tip

This cake is versatile! Swap the plums for apricots, cherries, or even apples for a delightful twist. If you’re using frozen fruit, let it thaw and drain well before adding it to the cake.

Enjoy this delicious homemade treat with a cup of tea or coffee!
