Homemade Spelt Dumplings

These homemade spelt dumplings are a nutritious and flavorful twist on a classic side dish. Perfect for pairing with sauces, meat dishes, or traditional Slovak recipes, they bring a healthy and hearty addition to your table.


Ingredients

  • 500 g plain spelt flour (Grandma’s Choice)
  • 500 g wholemeal spelt flour (Grandma’s Choice)
  • 5 g sugar
  • 60 ml oil
  • 580 ml milk
  • 20 g salt
  • 42 g fresh yeast

Procedure

1. Prepare the dough:
Combine all the ingredients in a food processor and knead until you achieve a smooth and elastic dough.

2. First rise:
Shape the dough into a loaf, cover it with cling film, and leave it to rest in a warm spot for about 30 minutes or until it doubles in size.

3. Shape the dumplings:
Roll out the dough on a floured surface and divide it into 8 equal parts. Shape each part into an oblong roll. If desired, divide the rolls into three sections and braid them into simple buns for a decorative finish.

4. Second rise:
Place the shaped dumplings on a baking sheet lined with parchment paper. Cover with a clean towel and let them rise for an additional 30 minutes until they double in volume.

5. Baking:
Preheat your oven to 210 °C (410 °F). Brush the tops of the dumplings with water and sprinkle with your choice of toppings—salt, cumin, sesame seeds, or poppy seeds for added flavor. Bake for about 12 minutes, or until the dumplings turn golden brown.


Final Tip

For a more traditional approach, skip baking and steam the dumplings. Shape them into larger oblong loaves, and steam on medium heat for about 20 minutes. Serve them sliced with hearty stews or creamy sauces for a comforting meal.
