This spelt fruit cake is a wholesome, quick, and easy dessert that’s perfect for any occasion. Combining the nutty flavor of wholemeal spelt flour with juicy fruit, it’s both delicious and healthier than traditional cakes.
Ingredients
- 200 g wholemeal spelt flour (Grandma’s Choice)
- 100 g plain spelt flour (Grandma’s Choice)
- 1 baking powder
- 100 g sugar (semolina or cane)
- A pinch of salt
- 100 g butter (melted)
- 2 eggs
- 150 ml milk
- 2–3 apples (peeled and sliced)
Procedure
1. Prepare the dough:
In a large bowl, combine the wholemeal and plain spelt flours, baking powder, sugar, and a pinch of salt. In another bowl, whisk together the eggs, melted butter, and milk. Gradually add the wet ingredients to the dry ingredients, mixing until you have a thick, smooth batter.
2. Shape the cake:
The dough will have a thick, slightly mushy consistency. Using a spatula, spread the batter evenly into a cake tin lined with parchment paper. Smooth the surface for even baking.
3. Add the fruit:
Arrange the sliced apples on top of the dough, ensuring they cover the entire surface for a beautifully rustic look.
4. Bake the cake:
Preheat your oven to 180 °C (356 °F) and bake for approximately 25 minutes, or until the surface is golden and a toothpick inserted in the center comes out clean.
Final Tip
This cake is incredibly versatile—swap out the apples for seasonal fruits like strawberries, blueberries, or pears. To elevate the flavor, sprinkle the top with streusel, chopped nuts, or dark chocolate chips before baking. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
Bon appétit! 🍎
