Spinach Pizza – A Healthy & Low-Carb Twist on a Classic

Ingredients

For the Spinach Crust:

  • 400 g fresh leaf spinach (or frozen, thawed, and drained)
  • 100 g grated cheese (mozzarella, parmesan, or a blend)
  • 4 eggs
  • A pinch of salt
  • A pinch of pepper

For the Toppings (Optional):

  • Tomato sauce or pesto
  • Cooked chicken breast, shredded
  • Cherry tomatoes, sliced

  • Dried oregano, basil, or Italian seasoning

Procedure

  1. Preheat the Oven & Prepare the Baking Sheet:
    • Set your oven to 200°C (392°F).
    • Line a baking tray with parchment paper.
  2. Prepare the Spinach Crust:
    • Blend the spinach until finely chopped.
    • Add eggs, grated cheese, salt, and pepper, mixing until well combined.
    • Spread the mixture evenly onto the baking sheet, forming a thin, even crust.
  3. Bake the Crust:
    • Place in the oven and bake for about 35 minutes, until firm and slightly golden.
    • Remove from the oven and carefully peel the crust off the parchment paper.
    • Place the crust back on the baking sheet.
  4. Add Toppings & Bake Again:
    • Spread a thin layer of tomato sauce or pesto over the crust.
    • Add shredded chicken, sliced cherry tomatoes, and extra cheese.
    • Sprinkle with oregano or basil for extra flavor.
    • Bake for another 10 minutes, until the cheese melts beautifully.
  5. Slice & Serve:
    • Let the pizza cool for a minute before slicing.

Final Tip
