Savory Muffins – A Tasty and Low-Carb Delight

These savory muffins are a perfect blend of cheesy goodness and aromatic garlic, making them a great snack, breakfast option, or party appetizer. Light, fluffy, and full of flavor, they are also low in carbs and gluten-free, thanks to the coconut flour!


Ingredients

  • 125 g grated mozzarella
  • 4 eggs
  • 4 tablespoons grated coconut (or almond flour for a nutty twist)
  • 1 tablespoon minced garlic
  • A little water (as needed for consistency)
  • A pinch of salt

Procedure

  1. Prepare the Batter:
    • In a mixing bowl, whisk the eggs until fluffy.
    • Add the grated mozzarella, garlic, salt, and coconut flour.
    • If the mixture is too thick, add a little water to achieve a smooth consistency.
  2. Fill the Muffin Tins:
    • Preheat the oven to 180°C (356°F).
    • Grease or line a muffin tin and fill each cup 2/3 full with the mixture.
  3. Bake to Perfection:
    • Bake for about 25-30 minutes, or until the muffins are golden brown and firm to the touch.
    • Remove from the oven and let them cool slightly before serving.

Final Tip

For extra flavor, add chopped herbs like chives, parsley, or oregano. You can also sprinkle grated Parmesan or chili flakes on top before baking for a little kick!
