This healthy, low-carb spinach pizza is a fantastic alternative to traditional dough. Made with fresh spinach, eggs, and cheese, it’s packed with nutrients and rich flavors. The addition of blue cheese gives it a bold, creamy touch, making it a true gourmet experience!

Ingredients

For the Crust:

  • 400 g fresh leaf spinach
  • 100 g grated cheese (mozzarella or Parmesan work well)
  • 4 eggs
  • A pinch of salt
  • A pinch of pepper

For Topping (customizable):

  • Blue cheese (or your favorite cheese)
  • Optional: cherry tomatoes, mushrooms, caramelized onions, or walnuts

Procedure

  1. Prepare the Crust:
    • Blend the spinach into a smooth consistency.
    • Add the eggs, grated cheese, salt, and pepper. Mix thoroughly.
  2. Bake the Crust:
    • Preheat the oven to 200°C (392°F).
    • Line a baking sheet with parchment paper and spread the spinach mixture evenly to form the pizza crust.
    • Bake for 35 minutes, or until firm and slightly crispy.
  3. Add Toppings and Finish Baking:
    • Remove the crust from the oven and carefully peel it off the baking paper.
    • Place it back on the same baking paper and add blue cheese or other toppings.
    • Bake for another 10 minutes, until the cheese melts and turns slightly golden.

Final Tip

For an extra crunch, sprinkle crushed walnuts on top before baking. Serve with a light salad or yogurt-based dip for a complete meal.
