Homemade Whole Wheat Rolls: A Crispy, Nutritious Delight

These warm, golden whole wheat rolls are the perfect alternative to store-bought pastries. With their crispy crust and soft interior, they pair beautifully with sweet or savory spreads, making them an excellent addition to your breakfast or snack table.


Ingredients

(Makes approximately 12 rolls)

  • 500 g whole wheat flour (Grandma’s Choice)
  • 60 g melted butter
  • 17 g fresh yeast
  • 1 teaspoon sugar
  • 350 ml lukewarm water
  • 3 teaspoons salt
  • Poppy seeds or caraway seeds for sprinkling

Procedure

1. Prepare the sourdough starter:
Place the flour in a large bowl and create a well in the center. Pour a portion of the lukewarm water into the well, crumble in the yeast, and sprinkle the sugar on top. Cover the bowl with a cloth and let it sit in a warm place for about 15 minutes, until the yeast starts to bubble and activate.

2. Make the dough:
Add the remaining lukewarm water, melted butter, and salt to the sourdough starter. Mix well and knead the mixture into a smooth, elastic dough. Cover the dough with a cloth and let it rise for about 1 hour, or until it doubles in size.

3. Shape the rolls:
Once risen, divide the dough into 12 equal pieces. Roll each piece into a ball, then stretch it slightly into a triangle shape. Roll the triangle into a crescent or traditional roll shape, and gently curve the ends if desired.

4. Let them rise again:
Place the shaped rolls on a baking tray lined with baking paper, leaving enough space between them. Cover the tray with a cloth and let the rolls rise for another 15 minutes.

5. Bake the rolls:
Preheat your oven to 200 °C. Brush the rolls with water or a beaten egg for a glossy finish, and sprinkle them with poppy seeds or caraway seeds. Place the tray in the oven and bake for about 10–12 minutes, or until the rolls are golden brown and fragrant.


Final Tip

For an extra crispy crust, place a small tray of hot water at the bottom of the oven to create steam while baking. If you prefer a softer texture, use a mix of 1:1 wholemeal and semi-coarse flour. Serve the rolls warm with butter, jam, or your favorite spread—they’re just as delicious the next day!
