Traditional Czech Buns (Buchty)

Soft, fluffy, and filled with delicious jam, these traditional Czech buns (buchty) are a beloved classic. Perfect for breakfast, dessert, or a cozy afternoon treat, they taste best fresh out of the oven with a dusting of powdered sugar!


Ingredients

  • 300 g semi-coarse flour
  • 200 g plain flour
  • 80 g powdered sugar
  • 75 g butter (melted)
  • 250 ml milk (lukewarm)
  • 2 eggs
  • 25 g fresh yeast
  • A pinch of salt
  • Jams (plum, apricot, or strawberry) for filling
  • Butter for greasing and brushing

Procedure

1. Preparing the yeast starter:
In a small bowl, mix 1 tbsp sugar, 1 tbsp flour, yeast, and a little lukewarm milk. Let it rest for about 10 minutes until foamy.

2. Making the dough:
In a large bowl, combine the yeast mixture with the remaining sugar, flour, eggs, melted butter, and salt. Gradually add the lukewarm milk and knead until you get a soft, elastic dough. Cover and let it rise in a warm place for about 1 hour, until doubled in size.

3. Shaping the buns:
Transfer the dough to a floured surface, roll it out, and cut it into equal-sized squares. Place a spoonful of jam in the center of each square, then fold and pinch the edges to form a bun.

4. Preparing for baking:
Melt some butter in the baking dish. Roll each bun in the butter on the sides before placing them closely together in the pan—this prevents them from sticking. Let them rise for another 15 minutes before baking.

5. Baking:
Preheat the oven to 180 °C (356 °F). Brush the tops of the buns with melted butter and bake for 45–50 minutes, until golden brown.


Final Tip

For a delicious twist, try filling the buns with cottage cheese, poppy seed filling, or Nutella. Once baked, sprinkle with powdered sugar and serve warm with a cup of tea or coffee.
