Rice Pancake – Light, Fluffy & Protein-Packed

This simple and nutritious rice pancake is perfect for a healthy breakfast or snack. Made with rice flour and protein powder, it’s naturally gluten-free and full of energy!


Ingredients

  • 90 g rice flour
  • 2 eggs
  • 20 g protein powder (vanilla or chocolate)
  • A little water

Procedure

  1. Prepare the Batter:
    • In a bowl, whisk the eggs until slightly foamy.
    • Add the rice flour and protein powder, mixing well.
    • Gradually add a little water until you achieve a smooth, pancake-like consistency.
  2. Bake the Pancake:
    • Preheat your oven to 160°C (320°F).
    • Pour the batter into a silicone mold or a baking dish lined with parchment paper.
    • Bake for 15 minutes, or until firm and lightly golden.
