This light and nutritious poppy seed strudel is a guilt-free take on the traditional favorite. Made with oatmeal instead of regular flour and sweetened naturally with honey, it’s a perfect treat for those looking to enjoy a healthy yet delicious dessert.


Ingredients

Dough:

  • 200 g oatmeal
  • 2 tablespoons honey
  • 200 ml water

Filling:

  • 70 g ground poppy seeds
  • 30 g protein powder

Procedure

  1. Prepare the Dough:
    • Grind the oatmeal into a fine flour (or use oat flour directly).
    • Mix with honey and water to form a sticky dough.
    • Let it rest for 10–15 minutes to allow the oats to absorb moisture.
  2. Shape the Strudel:
    • Sprinkle a sheet of baking paper with a bit of ground oats to prevent sticking.
    • Place the dough on the paper and, using a damp spatula, spread it into a square shape.
  3. Add the Filling & Roll:
    • Evenly sprinkle the ground poppy seeds and protein powder over the dough.
    • Using the baking paper, carefully roll the dough into a strudel shape.
  4. Bake to Perfection:
    • Preheat the oven to 200 °C.
    • Lightly brush the strudel with a beaten egg for a golden crust.
    • Bake for about 20 minutes, until firm and lightly browned.
  5. Cool & Serve:
    • Let the strudel cool slightly before slicing.
