Wholemeal Muffins with Apricots: A Fruity Delight

Wholemeal apricot muffins are the perfect blend of soft, nutty dough and juicy fruit, making them ideal for breakfast, an afternoon snack, or a quick dessert with coffee. With their simple preparation and wholesome ingredients, these muffins are a treat everyone will enjoy!


Ingredients

(Makes 12 muffins)

  • 300 g wholemeal spelt flour (Grandma’s Choice)
  • ¾ packet baking powder
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 250 ml cream
  • 100 g melted butter
  • 120 g icing sugar
  • Zest of 1 untreated lemon
  • 6 apricots

Procedure

1. Prepare the dry and wet mixtures:
In one bowl, combine the dry ingredients: flour, baking powder, sugar, and lemon zest. In a separate bowl, whisk together the eggs, vanilla extract, cream, and melted butter.

2. Combine the mixtures:
Gradually add the dry ingredients to the wet mixture, stirring gently until you achieve a smooth batter.

3. Fill the muffin tin:
Line a muffin tin with paper liners. Fill each liner about ⅔ full with the batter. Place a halved or quartered apricot (depending on size) into the center of each muffin.

4. Bake:
Preheat your oven to 180°C (356°F). Bake the muffins for about 20 minutes, or until they turn golden brown. Test for doneness by inserting a skewer into the center—if it comes out clean, they’re ready!


Final Tip
