Savoury Scones with Beetroot or Pears

These savoury scones are a delightful mix of sweet and savory, featuring the earthiness of roasted beetroot and the sweetness of pears paired with flavorful cheeses and herbs. Perfect for appetizers, party snacks, or a light lunch, they’re sure to impress your guests.


Ingredients

For puff pastry:

  • 500 g plain flour (Grandma’s Choice)
  • 500 g chilled butter
  • 50 g softened butter
  • 375 ml water
  • 2 tablespoons vinegar
  • 1 teaspoon salt

For the filling:

  • 2 small beets
  • 4 ripe pears
  • Balkan or goat’s cheese
  • Gorgonzola cheese
  • A handful of walnuts
  • Fresh thyme, rosemary, and oregano
  • Ground black pepper and salt
  • 1 tablespoon butter
  • 1 tablespoon meadow honey
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 egg (for brushing)

Procedure

1. Preparing the beets:
Wrap the beets in aluminum foil and bake in a preheated oven at 180 °C (356 °F) for about 1.5 hours, or until tender. Once cool, peel the beets and slice them thinly.

2. Preparing the pears:
Heat butter in a pan with a few rosemary sprigs. Add sliced pears and sauté for about 5 minutes until slightly caramelized.

3. Making the dressing:
In a small bowl, whisk together olive oil, honey, and lime juice. Season with thyme, salt, and black pepper.

4. Preparing the puff pastry:
Roll out the puff pastry to a thickness of 3 mm. Cut into 8 cm squares. Prick the center of each square with a fork to prevent it from puffing up during baking.

5. Assembling the scones:

  • For beetroot scones: Place beet slices in the center of the pastry square, top with Balkan or goat’s cheese, and drizzle with a little dressing.
  • For pear scones: Add pear slices to the center, along with Gorgonzola, crushed walnuts, and fresh oregano leaves.

6. Baking:
Brush the edges of the pastry squares with beaten egg and bake in a preheated oven at 180 °C (356 °F) for approximately 15 minutes, or until golden brown.

7. Finishing touches:
Once baked, garnish the scones with fresh herbs and drizzle the remaining dressing over the top for added flavor.
