Linz Cookies – A Classic Buttery Treat

These Linz cookies are a timeless favorite, known for their buttery, melt-in-your-mouth texture and delicious fruit filling. Perfect for holidays or as an everyday treat, these cookies are simple to make and taste even better after a day as the flavors settle.


Ingredients

  • 420 g plain flour
  • 140 g powdered sugar
  • 250 g butter, softened
  • 4 egg yolks
  • Fruit marmalade (apricot, raspberry, or your favorite)
  • Powdered sugar mixed with vanilla (for dusting)

Procedure

  1. Prepare the dough: Sift the flour into a large mixing bowl. Add the softened butter, powdered sugar, and egg yolks. Knead everything together until you get a smooth and elastic dough.
  2. Chill the dough: Wrap the dough in plastic wrap and let it rest in the refrigerator for a few hours. This step enhances the flavor and makes it easier to roll out.
  3. Roll and cut: Once chilled, roll the dough out on a floured surface to about 3-4 mm thickness. Use a cookie cutter to cut out shapes. If making sandwich cookies, cut a small hole in half of them to create the top layer.
  4. Bake: Preheat the oven to 175 °C (350 °F). Place the cookies on a lined baking sheet and bake for about 10 minutes, or until lightly golden.
  5. Assemble: Once cooled, spread a thin layer of marmalade on the bottom cookies. Place the top cookies (with the hole) over them and gently press together.
  6. Dust and serve: Lightly dust the top with vanilla-scented powdered sugar for an elegant finish.

Final Tip

For extra festive charm, use different shaped cookie cutters or fill the center with chocolate ganache instead of marmalade. These cookies taste even better the next day as the flavors blend beautifully!
