Caramelized Carrot Cake – A Sweet and Spiced Delight

This caramelized carrot cake is a moist and flavorful treat that brings out the natural sweetness of carrots through a slow caramelization process. The combination of warm cinnamon, buttery richness, and spelt flour creates a wholesome dessert perfect for any occasion.


Ingredients

  • 500 g grated carrots
  • ½ cup melted butter
  • 100 g sugar
  • 2 eggs
  • 3 tablespoons whole milk
  • 1 cup spelt flour
  • 1 teaspoon cinnamon
  • A pinch of salt
  • 1 teaspoon baking powder

Procedure

  1. In a saucepan, heat the carrots with a little butter and allow them to foam slightly.
  2. Sprinkle half the sugar over the carrots and let them caramelize gently.
  3. Add the remaining butter and continue to cook for about 15 minutes, stirring constantly, until the carrots soften. Let the mixture cool.
  4. Preheat the oven to 180 °C (350 °F).
  5. In a separate bowl, beat the eggs with the remaining sugar until a light and fluffy foam forms. Stir in the milk.
  6. Sift together the spelt flour, cinnamon, salt, and baking powder.
  7. Gradually fold in the caramelized carrots, mixing until well combined.
  8. Pour the batter into a cake tin lined with baking paper and bake for approximately 40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool before slicing and serving.
